Breakfast Salad Bowl

Salad for breakfast? This may seem strange to some of you. We are conditioned that breakfast must be cereal, fruit, toast, eggs, bacon or the likes. I am here to bust that myth, and breakfast can be any food you want! Well, if you are around here, you know that I mean any food that serves you and your well-being (and maybe a danish with a coffee occasionally). What I love about this breakfast salad bowl is the burst of sweetness from the blueberries. It is a simple salad to make, and adding the sprinkle of hemp seeds will add extra protein to support your metabolism.

Serves 2

Preparation time 10 minutes

What you need

2 slices of sourdough bread

2 handfuls of salad leaves per bowl

2 baby cucumbers, sliced

75g feta cheese, cubed  

1 ½ punnet of blueberries

2 tbsp. pumpkin seeds

2 tbsp. hulled hemp seeds (optional)

Dressing

1 tbsp. olive oil

2 tsp. honey

½ lemon, juiced

Pinch of pepper

 

What you need to do

1. Toast the bread. Once golden, tear it into small pieces and put it aside.

2. Assemble the salad in large bowls. Mix the olive oil, honey, lemon juice, and pepper in a small bowl. Place cucumber, feta cheese, blueberries, and toast pieces in a bowl, pour over the dressing, and gently toss.

3. Place two handfuls of salad leaves in each dish, place the dressed cucumber mix on top and sprinkle over the pumpkin seeds and optional hemp seeds.
